Depending on what we decide to grill, we can pair our wines in various ways in order to enhance the characteristics of the food and the characteristics of the wines. Here's some examples:
BEEF: in general, we like wines made with Nebbiolo that with its tannins will enhance the juicy meet:
- Hamburger, veal sirloin, skewers,: Metodo Classico Valsellera Rosé, Langhe DOC Nebbiolo "I Patriarchi" or Piemonte DOC Grignolino
- Fillet, sirloin, rib-eye steak: Langhe DOC Nebbiolo "I Patriarchi", Piemonte DOC Grignolino
- Fiorentina steak, Tomahawk steak: Barbaresco DOCG Gallina
LAMB/SHEEP (lamb chops, sheep/lamb skewers): the perfect wines to pair with this kind of tender and savory meat are full bodied red wines with softer tannins, just like our Langhe DOC Rosso "Settecento" that combines the full body of Barbera with the tannins and elegance of Freisa and Nebbiolo.
PORK (pork chops, bacon, sausages): this kind of meat that is pretty fat requires a wine with a good acidity to cleanse your palate, especially when served with spicy sauce: we suggest to try our Barbera d'Alba DOC "l'Amorosa" if you are looking for an easy-sip fresh and fruity wine or Barbera d'Alba DOC Superiore "I Patriarchi" if you are looking for a wine with body but with the right acidity.
CHICKEN (chicken wings, chiken drums, skewers): with chicken we suggest a fresh and citrussy white wine, like Langhe DOC Chardonnay Gallina or Roero DOCG Arneis "Magia" or an easy and fruity red wine, like Piemonte DOC Grignolino that you can even serve cool from the fridge, or Dolcetto d'Alba DOC Gallina.
FISH:
- salmon: this is a fish with a good content of fat; this is the reason why it's preferable to pair with wines with vibrant acidity and if they are bubbly, even better! We suggest Metodo Classico Valsellera Rosé, or Piemonte DOC Grignolino
- white fish: Langhe DOC Arneis, Langhe DOC Chardonnay Gallina
- shrimp, skewers: Metodo Classico Valsellera Cuvée Brut
VEGETABLES: everybody knows vegetables are difficult to pair with wine but we have the right match: Langhe DOC Arneis with salads and grilled veggies, or Metodo Classico Valsellera Cuvée Brut for a crunchy and fresh sip.
